Here’s the only real recipe you’ll ever need:

  1. Two pieces of lefse
  2. Two eggs
  3. Butter
  4. Italian seasoning
  • Crack two eggs in a buttered saucepan. Sprinkle liberally with Italian seasoning. Cover for about two minutes.
  • While waiting, butter two pieces of lefse. Microwave for 15-20 seconds.
  • Uncover and flip the eggs. Let cook for just a bit, a minute or less. Salt and pepper to taste.
  • Put one egg on each warmed lefse piece. Roll up.

This is a goddamn miracle, every time. But it’s one I usually only get to enjoy when I’m home. Luckily I have a saint mother who shipped me a twelve-pack today from Countryside Lefse — that’s twelve packs of six slices each. And not that we’re counting but it’s only 30 calories apiece and is better than any bread I’ve ever had.

(For those of you not in the know about lefse: it’s a Norwegian potato bread, thin, tortilla-like).

So the above is basically what I’m eating at least once a day for the rest of the month. Bless.

    Here’s dessert —
    Butter Lefsa, sprinkle lightly with grated cinnamon and brown sugar. Roll.
    Microwave. Gob it down.
    Perfection.
