I am not a cook, but I’m okay at improvising. For instance, I do a lot with crescent rolls. From bacon or ground turkey and cheese roll-ups, to ranch pigs in a blanket, to pizza rolls, to sweet and savory (syrup, cheese, powdered sugar, bacon), to classic breakfast (scrambled eggs, bacon, cheese), etc.

I definitely eat more like a college student than functioning adult but it’s been about a year since I’ve routinely eaten ramen noodles for dinner so I’ll call that what it is: progress.

2019 is my year of create, so I might as well create a few recipes. Last week: my own personal breakfast pizza. This was an unplanned experiment … I was hungry, I had eggs, I had pizza crust. But I’ve now had it three times this week! It made a beautiful post fitness class breakfast this morning:

Step One: Take a mini Boboli pizza crust. Or use crescent roll dough.

Step Two: Coat the edges with garlic olive oil.

Step Three: Crack an egg or two directly on top of the crust.

Step Four: Sprinkle with eggs with Italian seasoning

Step Five: Add cut up turkey or bacon pieces to the pie.

Step Six: Top creation with grated parmesan cheese.

Step Seven: Bake 10 minutes in the oven at 450 degrees on a cooking sheet (I coat with cooking spray first).

Result: a beautiful over-medium egg personal breakfast pizza.
